Purpose of this Assignment
This assignment is designed to assess your ability to defend and expand on Assessment 1 with a view to deepening your understanding of how redesigning service processes can improve operational efficiency.
This assignment is an extension of assessment 1.
Demonstrate Achievement of these Learning Outcome
1.1 Understand operations management concepts, theories and models suitable for designing product, service and processes, planning and control, and implementing improvements plans in tourism and hospitality businesses.
1.2 Evaluate operations management issues impacting product, service and processes in tourism and hospitality businesses.
1.3 Develop suitable operations management strategies that can help in providing sustainable products service and processes in tourism and hospitality businesses.
1.4 Present effective decision-making skills for evaluating product, service and processes with the help of different tourism and hospitality case studies.
Your Tasks
In the 15-minute audio/video recorded presentation, you must independently research/read other material other than the course materials and content; apply your findings in your arguments in an informative manner. Based on Assessment 1, you are required to advise James on ways in which Roxy’s can become a more efficient business operation.
Your Presentation Must Address these Questions
- James has engaged you as the operations management consultant, to assess the current layout of the food truck and its operational efficiency. Develop and propose recommendations for how the layout can be rearranged to enhance Roxy’s operational efficiency?
(Note: Layout changes must be visualised in your presentation).
- Using the information provided in the case study, calculate and explain:

- Current throughput time, throughput rate per minute and per hour given that each sandwich is made to order. What is the maximum or total capacity of the food truck operation and identify any bottlenecks.
- Propose a new arrangement by adding two more employees and redistributing tasks to alleviate the bottleneck and maximise total capacity. Re-calculate the throughput rate again per hour and in minutes with the new arrangement.
- Evaluate the impact of including the additional two employees on job design at Roxy’s operation.
(Note: Excel spreadsheet computations for A-B must be visualised in your presentation).
- As noted in the case study, during peak periods, the total wait time from arrival to departure can exceed 16 minutes. Analyse and discuss three innovative strategies, grounded in the principles learned in this course and informed by relevant theories, that Roxy's could implement to mitigate the perceived negative effects of queuing and enhance customer satisfaction during long wait times.
- Critically assess and explain how the implementation of a lean synchronisation approach could enhance Roxy’s strategic business model. Present specific lean principles and techniques that could be applied.
- Formulate strategic recommendations for James to ensure long -term sustainability of Roxy's. Provide a well-reasoned justification for proposed strategies, considering the business's current and future challenges.
Audio/Video Presentation Time Limit: 15 minutes (± 1 minute)
Note that the examiner will stop grading the assessment at 16 minutes.
Other Requirements
- A maximum of 6 PowerPoint slides can be used in your presentation.
- These slides must be uploaded as a separate file in link given under A2.
- Do not exceed/be under the time/slides requirements.
- If your video exceeds the maximum length of 16 minutes, the marker will stop the video and you will only be marked on content delivered up to that point. You will also loose marks on the “follows instructions” marking criteria. This might also impact on your marks on other criteria if you are not finished when the marker stops watching, as you may not have demonstrated sufficient achievement of some marking criteria.
- Your student ID or another photo ID must be inserted on the corner of the FIRST slide.
- Use footnotes on each slide to demonstrate where you got particular information from.
- In your audio/visual presentation, both your PowerPoint slides and your whole face must always be visible.
- This presentation must be in your own voice, and not presented using a ‘screen reader’, a ‘read aloud’ software function, or AI.
- Do not use video or audio clips in your presentation.
- No props (e.g., costumes, musical instruments, laboratory equipment and animated backgrounds) are permitted in the presentation.
