Project Task:

PART A Research and identify legal requirements for compliance

You have been employed as the Food and Beverage Manager at the Roma Café’ for 2 years. The owner has now opened The Beach Café which has a capacity of 80 indoor seats. You will now also be in charge of this venue

The Beach Café also has space for seating 30 outside, a space which the owner has decided to utilise, apply license for and get authorised. There is a separate defined area where liquor is to be supplied and/or consumed which needs to be authorised by the state body.

The license has to be applied for with the maximum number of patron capacity of the café. The indoor premises is already fully licensed.

The predominant activity that will be carried out on the premises will be the preparation and serving of meals to be consumed on the licensed premises. The café will also be picking up meat (e.g. from an abattoir) to sell directly to customers.

The café’ will operate 7 days a week, cater for tourists and locals, serve light lunches and afternoon tea and will sell liquor for consumption on the premises.

Key information:

  1. The business is already registered.
  2. The business will conduct activities on public holidays.
  3. The operation will employ approximately 15 full time and 10 casual staff during the first year, in addition to 2 apprentice chefs. The staff that will be employed will have adequate knowledge of liquor licensing laws.
  4. The key staff to support the operations includes, a Front of House Manager, a Head Chef and a Sous Chef.
  5. The business will not use public spaces for any activities.
  6. The business will promote their business on internet websites.
  7. The annual turnover is expected to exceed $2.5 million per annum.
  8. The business requires a new ABN number.
  9. You require all forms of insurances common for such operations.
  10. There will be advertising on sign posts on the approach to either side of the property.
  11. The establishment will be playing background music using CDs or I-pod.
  12. All other requirements will be those typical for a licensed food premises.

The owner is also aware of the training needs for liquor licence applicants to ensure that applicants have an adequate knowledge of the liquor law. Applicants will be required to complete one of the following approved training courses to meet the new entrant training requirement:

  • Achieve Liquor Licence Compliance
  • Licensees’ First Step
  • Licensee Compliance Certificate
